This is a beautiful dessert wine from John & Nicola Bojanowski's organic winery in St.Jean de Minervois, deep in the Languedoc countryside. Made from that grapiest of grapes Muscat, this is floral and fruity with aromas of orange flower and honeysuckle combining with flavours of sweet pink grapefruit and mandarin. The finish has such a refreshing tang that you can drink it on its own as an aperitif, but it would also take kindly to strawberries and fruit pastries.

The Lustau family began bottling their own sherries and exporting by 1950. Bodegas Lustau is considered a world-class benchmark for top-quality wines. Lustau produces all styles of sherry, from Manzanilla through to Pedro Ximénez, as well as special bottlings, single cask, VOS and VORS sherries. The En Rama range, produced from select barrels from each of the three towns, is a highly anticipated release each spring. Lustau has, over the years, won multiple medals and trophies, including 'Best Spanish Winery' and 'Best Sherry Producer' at the IWSC and the Len Evans Trophy for consistency (won in 2011 and 2016) at the IWC.This Fino is a textbook example, dry, tangy and fresh yet complex and lingering; a perfect aperitif with olives and salted almonds.

Based in Yecla, Familia Castaño is known for its huge efforts to promote one of Spain’s native varieties: Monastrell. Castaño embodies the best of what southern Spain has to offer, producing rich, warm-climate wines, with almost Syrah-like complexity, which overdeliver in terms of value year after year. Castaño began bottling characterful, single-varietal Monastrell in the 1980s, when the variety was used exclusively for bulk wines and blending. Today, in the expert hands of Daniel Castaño and his family, the variety maintains high quality even at moderate to generous yields. 80% of the family’s 600 hectares of vineyards are dedicated to Monastrell, with smaller plantings of Cabernet Sauvignon, Macabeo and Chardonnay among others.The ‘Dulce’ is delicious, full of dried fig, raisin and plum jam flavours, with a rounded mouthfeel and balanced acidity that keeps the finish fresh.Perfect with rich blue cheeses such as Stichleton and chocolate desserts, or even just good quality chocolate on it's own. A real treat.

One of the smallest of all Madeira producers, and only founded in 1946 by Ricardo's grandfather, and yet with an extraordinary reputation.
Ricardo Diogo de Freitas took over the winemaking at the family firm in 1993, and hasn't looked back. He possesses energy in spades - eRobertParker calls him the Island's "Gamechanger" and its easy to see why, but risks overlooking his commitment to tradition, or at least the reinvention of it.Certainly a sweet wine, but with great balancing acidity. If serving as a dessert wine, partners very well with dishes which contain caramel, dried fruits, toffee and other similar flavours. Also a great wine for cheese, especially strong hard cheeses (Old Winchester, Vintage Lincolnshire Poacher etc)

‘El Candado’ Pedro Ximenez Sherry, Valdespino

Valdespino is one of the oldest bodegas in Jerez, with a history of Sherry production going back six centuries. Back in 1264, Alfonso Valdespino was one of 24 knights who fought against the Arabs for the city of Jerez with King Alfonso X. As a reward for his efforts he was given land that formed the basis of the bodega. Today Valdespino belongs to the Estevez family, who purchased the bodega in 1999.This delicious Pedro Ximenez has a liquid Christmas cake character, great depth and a lovely flick of acidity on the finish which serves to emphasise the unctuous sweetness and flavours of dried fig and raisins.Great poured over vanilla ice cream, with mince pies, hard or blue cheese, or just on it's own after a meal
