Ampelio Bucci has 31 hectares of organically cultivated vineyard on his 350 hectare estate. Of these, 25 hectares are Verdicchio, spread over five separate vineyards. The old vines and low yields give wines of great intensity.
This Verdicchio, fermented in stainless-steel tanks, is bottled in the July after the vintage, as the structure of the wines means that they require longer ageing prior to bottling. It has lovely purity, good depth and superb complexity on the palate.
Perfect with simple grilled fish with good olive oil. or garlicky pasta, or antipasti.

I love this dry Riesling, it has such purity of fruit; it's light yet focused with complex citrus and herbal aromas.
Richer on the palate, it marries perfectly with dishes with some chilli (and lemongrass).

Cullen Sauvignon Blanc/Semillon

It is one of the oldest and most awarded family wineries in Western Australia’s famous Margaret River region. First established in 1971 by Dr Kevin and Diana Cullen and now run by their daughter Vanya, the winery has built an outstanding reputation for fine certified biodynamic wines that receive critical national and international acclaim. In 2019, celebrating 30 years at the helm, Vanya received double Winemaker of the Year honours at both the Australian Women in Wine Awards and the Halliday Wine Companion Awards.
Although best known for their red blends and top Chardonnay, I have always been a fan of this Bordeaux blend. It has an elegance and balance that is usually lacking in pure Aussie Sauvignon Blanc. It has the freshness and crunchy, zingy flavours but the Semillon reigns it in and adds subtle savoury complexity. As such it is a beautiful wine to drink with fresh seafood and salads; it doesn't overpower the food but creates an experience which is more than the sum of it's parts - the magic of great wine.
Although completely delicious right now (it has 4 years age), it is a wine that rewards cellaring. I have kept these for 5 years or so and they develop more complex, savoury, mineral layers and turn into truly exceptional wines.
Louro de Bolo, Rafael Palacios

Since starting his own winery in 2004, Rafael Palacios has fast become one of Spain’s pre-eminent producers of white wine. His 32 parcels of Godello, which are spread over 19.5 hectares in the Val do Bibei in Valdeorras, Galicia, produce some of Spain’s most interesting white wines.
The hills are so steep that most of the vineyards are planted on terraces buttressed by stones. Rafa’s viticulture is sensitive to the fragile nature of these old terraces, and he has adapted his approach to ensure these magnificent structures are preserved. His viticulture is low intervention, with some of the older plots (or ‘sortes’ in Galician) being farmed biodynamically.
This really is one of my favourite white wines! It's made from small parcels of Godello with an average age of 25 years, grown at over 600 metres above sea level. The must is fermented in 35 hectolitre French oak foudres, after which the wine is aged on lees for four months before bottling. The wine has a lovely flinty character on the nose that gives way to a fresh note of wild mountain flowers. On the palate, it has a taut, saline fruit with a gorgeous textural complexity.
When pairing with food, think the same as with Premier Cru Chablis, classic fish dishes, shellfish with garlic butter, that sort of thing.
