It is quite a hard job having to find what works best and after many hours of tasting Mike, Justin, James and the team giggled and agreed that this was absolutely brilliant! Tasting Notes
Harrow & Hope Brut Reserve NV – Baron Bigod Brie
Henry and Kaye Laithwaite make this exceptional wine just outside Marlow from their own organically farmed vineyard. It’s up there with the very best English Sparkling and certainly on a par with good Champagne. This is the perfect pairing to go with the Baron Bigod – Truffled Brie. It has a brioche depth that marries perfectly with the buttery paste. The gentle citrus acidity cuts through the brassica notes on the rind. The mouthfeel of the cheese is deliciously lifted with the gently sparkling mousse that all works far too easily. This is just delicious, and every mouthful needs to be savoured.
Niepoort LBV – Stichelton
Dirk Niepoort is often lauded as Portugal’s best winemaker, making some of Portugal’s best table wines. However, Port is always at the heart of what he does and year after year, this LBV is one of the very best. The depth of this port works wonderfully with this King of Blues, Stichelton. On the nose you will pick up rich chocolate that pairs superbly with the umami, brothy rind and creamy halo below, there is a fruit of the forest note on the palate with a moderate richness that compliments the paste perfectly. The spicy notes of this port work seamlessly with the piquant and salty notes of the blue veining.
Giant Steps Chardonnay – Mrs Kirkham’s Lancashire
Phil Sexton established the Giant Steps wine brand in 1997. The vineyard is based in The Yarra Valley Australia. Phil’s objective was to cultivate a high-quality and authentic Chardonnay. He found the cool climate, gentle breeze, and good soil quality to be perfect. The peachy notes of this Chardonnay work like a dream with the dense buttery notes of the Kirkham’s Lancashire, the yoghurt zing that this cheese delivers harmonises with the wines delicate citrus notes. The fungal, truffle, mushroom, and cellar notes on and just under the rind are further enjoyed with the toasty yet delicate oak flavours that this champion chardonnay delivers. What a cheese and what a match.
