A hard, artisan cheese made by Stone Tree Dairy in Dartmouth, Devon. It is inspired by Alpine-style cheeses and features a washed rind with a vivid deep rust-colored exterior. The cheese has a bold flavour with nutty and slightly salty notes, developed from the rind brushed in brine twice a week. Redlap is made from unpasteurized goat’s milk, salt, and vegetarian rennet, and is known for its smooth, firm texture. It has gained recognition as Britain’s Best New Cheese in 2025, showcasing its popularity and quality.

Founded in 2024 on an historic farm with a history of Goats since at least the time of the Domesday book. They are passionate abouts goats, cheese, sustainability, and harmony with the land. Their own herd of goats raised on the farm, graze on the south devon coast. Redlap has a smooth, dense, and mellow texture that comes from the lush high pastures and clean air. Alpine in style but changes in seasonality. A striking feature is its vivid rust coloured rind from the scrubbing of the cheese with brine. Its Unpasteurised and made using vegetarian Rennet.
